Finally, for those that keep a vegan diet, the following recipe is for you. Not only is it completely without any animal products, it is made with no added oils! It has the texture and taste of the real deal.

Vegan Mock Liver

Ingredients

¼ cup vegetable broth

½ cup onion

2 cloves garlic

2 cups button mushrooms

½ teaspoon sea salt

½ cup walnuts

1 teaspoon balsamic vinegar

black pepper

Step by Step Instructions

Step 1

Heat vegetable broth in a shallow skillet

Step 2

Add ½ cup of chopped onion, 2 cloves of minced garlic and season with a few sprinkles of salt. Sauté.

Step 3

Add 2 cups of sliced button mushrooms.

Step 4

Saute until the mushrooms have released their liquid and the onion and garlic have begun to caramelize (if needed add a bit more vegetable broth).

Step 5

Remove the mushrooms, onions and garlic from the pan and place into the bowl of a food processor.

Step 6

Add the walnuts, balsamic vinegar and a pinch of pepper.

Step 7

Combine using the pulse function.  The mixture should be smooth without any visible pieces of walnut.

Step 8

Taste. Adjust seasoning if necessary.
