Black-Eyed Pea Hummus

Based on a recipe by Michael Twitty

Ingredients

Ingredients:

15 ounce can black eyed peas, rinsed and drained

¼ cup extra virgin olive oil

⅓ cup tahini

⅓ cup fresh lemon juice

1 ½ teaspoons salt

4 garlic cloves, chopped

1 teaspoon smoked paprika

1 teaspoon cumin

½ teaspoon chili powder

1 teaspoon brown or turbinado sugar

1 teaspoon hot sauce

¼ cup chopped fresh cilantro

Step by Step Instructions

Step 1

Drain and rinse the canned black eyed peas. Reserve one tablespoon of the beans for serving

Step 2

Place everything but the fresh cilantro into the bowl of a food processor and blend until smooth and creamy.

Step 3

Taste to adjust seasoning.

Step 4

Plate the hummus and top with the reserved black eyed peas and a little freshly chopped cilantro.
