Southern Style Parve Banana Pudding

Serves 4

Ingredients

2 cups of oat milk (any plant-based milk)

OR

1 cup oat milk and 1 cup whole fat coconut milk

3 ½  tablespoons cornstarch

2 to 3 tablespoons sugar of choice

2 tablespoons peanut butter (any nut butter will do)

2 to 3 teaspoons vanilla extract

1 pinch of kosher salt

1 pinch of turmeric 

Parve whipped cream

2 to 3 bananas peeled and sliced into ¼ inch rounds

Vanilla wafers or graham crackers, crumbled, reserving some whole for serving

 

Step by Step Instructions

Step 1

In a saucepan mix together the milks, sugar, cornstarch, peanut butter, salt and turmeric

Step 2

Once the cornstarch has dissolved, turn the heat to medium and bring to a boil, whisking the whole time.

Step 3

Turn the heat to low and continue whisking. The pudding will begin to become smooth and creamy.

Step 4

Continue whisking on low until the pudding has completely thickened.

Step 5

Remove from the heat and whisk in the vanilla extract.

Step 6

Let cool. Once the pot has cooled enough, cover with plastic wrap to prevent the pudding from developing a skin.

Step 7

Refrigerate until completely cool and ready to assemble.

Step 8

To assemble the pudding in either a glass bowl or individual bowls, layer the pudding with sliced bananas, whipped topping and crumbled cookies.

Step 9

Top off with whipped topping and a few whole cookies
