Gelly’s Baked Chicken, Rice and Mushroom Casserole

Ingredients
4 chicken bottoms (leg quarters)
2 cups of rice
1 14.5oz can mushrooms, pieces and stems
Salt and pepper to taste
Any other seasoning you like
Water
(any vegetables you like can be added or substituted for the mushrooms)
Step by Step Instructions
Step 1
Preheat the oven to 500F.
Step 2
In a 9” x 13” pan place chicken bottoms and rice.
Step 3
Add the canned mushrooms, scattering them evenly around the pan.
Step 4
Season to taste with salt, pepper and any spices you prefer.
Step 5
Add enough water to fill the pan to the top.
Step 6
Cover the pan tightly with heavy aluminum foil.
Step 7
Bake in the preheated oven for 1 ½ hours.
Step 8
Remove from the oven and serve on a platter or on individual plates.
