Carrot Hummus

Serves 6

Ingredients

1 cup raw cashews

4 cloves garlic

1 pound carrots, peeled and cut into chunks

1 tablespoon lemon juice

1 tablespoon KFP coconut aminos

1 bunch flat leaf parsley, chopped

1 tablespoon mayonnaise/vegannaise

Salt to taste 

Step by Step Instructions

Step 1

Combine cashews and garlic in the bowl of a food processor and pulse until finely chopped.

Step 2

Add the carrots, lemon juice, coconut aminos, parsley, and mayonnaise and process until smooth and creamy in texture.

Step 3

Taste. Add salt as needed.
