Old Bay Boiled Pot

A traditional boiled pot is generally made with some type of shellfish and sausage boiled along with vegetables and served in large bowls or dumped out on a common surface.  This recipe takes out the treif and makes a completely vegan version with the option to add meat or fish. You will need a very large stock pot for this recipe – 12 to 16 quart capacity.

Ingredients

4 quarts water

1 can / bottle of dark beer

½ cup OLD BAY® Classic Seafood Seasoning

2 tablespoons kosher salt

8 medium red potatoes quartered

2 large onions cut into wedges

8 ears fresh corn shucked and cut into 3 inch wide chunks

Optional ingredients: Either fish or meat (or you can use vegan sausage for a more authentic taste)

4 lbs firm fleshed fish such as Cod or Halibut cut into chunks

OR*

4 lbs lean smoked sausage, cut into chunks

Step by Step Instructions

Step 1

Bring the water, beer, Old Bay seasoning and salt to a boil in a large stock pot set over high heat or over a hot open fire supported by a grate.

Step 2

Add potatoes and onion chunks. Cook for 8 minutes.

Step 3

Add corn chunks. Cook for another 8 minutes.

Step 4

If using optional ingredients add either the fish OR the sausage (if using vegan sausage you can use both) and cook until the fish is opaque or an additional 5 to 8 minutes.

Step 5

Drain most of the cooking liquid leaving some in the pot for serving.

Step 6

Serve in a large serving bowl or drain completely and pour out onto a paper covered table. Sprinkle with additional Old Bay seasoning if you like. Crusty bread makes a nice side.

Note

Kosher practices do not allow for fish and meat to be cooked or served together. If you would like to use both, you can use a vegan sausage.
