California Roll in a Jar Salad

Makes 4

This is a perfect lunch for your picky teen or for yourself. Satisfies that craving for sushi; but no special skills or tools required.

Ingredients

4 wide-mouth mason jars or similar containers

2 cups cooked seasoned sushi rice

2 medium ripe avocados, peeled and cubed

1 cup shredded imitation crab (sticks can be cubed as well)

1 cup cucumber, chopped

2 sheets of nori, sliced into thin strips

Toppings: pickled ginger, wasabi paste, soy sauce or sesame seeds

Step by Step Instructions

Step 1

Prepare 4 wide-mouth mason jars or similar containers

Step 2

Divide the avocado, cucumber and imitation crab into 8 equal portions. Layer each jar with a portion of each.

Step 3

Sprinkle some of the torn nori into each jar.

Step 4

Divide the remaining rice and place into the jars.

Step 5

Use the remaining avocado, cucumber and imitation crab to add another layer to each jar.

Step 6

Cover and refrigerate until ready to eat.

Step 7

Include small containers of toppings as well as additional nori to crumble onto the salad.

Step 8

When ready to eat, pour into a bowl or plate and toss to combine. Top with toppings of your choice.
