Easy Honey Cookies

Parve and can be Gluten-Free 

Makes about 6 dozen medium cookies 

Ingredients

4 cups all purpose OR 1 to 1 gluten-free flour

4 eggs

¾ cups honey 

¾ cups sugar

1 teaspoon baking powder

1 teaspoon baking soda

¾ cups oil 

1 teaspoon cinnamon

 

Step by Step Instructions

Step 1

In the bowl of a stand mixer mix all ingredients until well combined.

Step 2

Refrigerate dough for at least 30 minutes.

Step 3

Preheat the oven to 350F.

Step 4

Using an ice cream scoop of the size you prefer/using your hands roll the dough into balls the size of a walnut.

Step 5

Place the balls evenly spaced (the cookies will spread a bit) onto a parchment-lined baking sheet.

Step 6

Bake at 350F for about 15 minutes until cookies are golden.

Step 7

Cool on a wire rack.

Note

Do not use almond flour! You must use a 1 to 1 gluten free flour mix or the cookies will crumble.
