Tostones (Fried Plantains)
(Traditional Cuban, Latin American Recipe)
Ingredients
Vegetable oil for frying
2 green (underripe) plantain bananas
Kosher salt to taste
Step by Step Instructions
Step 1
Using a large, deep-sided frying pan pour enough oil to fill the pan about halfway and place over medium to high heat.
Step 2
Remove and discard the peel from the plantains.
Step 3
Cut into even round discs about 1¼ of an inch thick.
Step 4
The oil will have reached temperature when a droplet of water or a small piece of plantain dropped into it sizzles.
Step 5
When the oil is hot carefully drop the plantain rounds into the pan.
Step 6
Fry for two minutes, then flip and fry for two more minutes on the other side.
Step 7
Using a spider or slotted spoon remove the plantains from the oil. Then using a tostonera or a frying pan and a flat surface, smash the fried discs until they are squashed flat.
Step 8
Return the squashed plantain discs to the oil, and fry an additional 2 minutes until golden and crisp.
Step 9
Remove the plantains from the oil and drain on paper towels.
Step 10
Sprinkle with kosher salt and serve while still hot.
