Amazing Mashed Potatoes

This recipe feeds a crowd.

Ingredients

5 lb of Yukon gold or potatoes of your preference, peeled or not (again, your preference)

8 quarts salted water

Vegetable puree made from soup vegetables

2 large onions, sliced and caramelized 

2 sticks vegan butter

½ to 1 cup milk substitute of your choosing

Salt & pepper to taste

Optional: Cut chives, 8 oz. vegan cream cheese or vegan sour cream

Step by Step Instructions

Step 1

Bring a large 8 quart pot of salted water to a boil.

Step 2

Add your potatoes to the boiling water and cook until a fork easily pierces the potatoes.

Step 3

Drain, reserving 1 cup of boiling water.

Step 4

Mash using a potato masher or a wooden spoon. DO NOT use an immersion blender or electric beaters as this will cause the potatoes to become gummy.

Step 5

While mashing add the vegan butter to the hot potatoes.

Step 6

Add the caramelized onions and any remaining oil from the pan you caramelized them in.

Step 7

Puree the leftover soup veggies and add them to the mashed potatoes.

Step 8

Stir to incorporate.

Step 9

Add ½ cup to 1 cup of milk substitute if the mash is too thick.

Step 10

Taste and adjust seasoning.

Note

For extra creamy mashed potatoes add one container of vegan cream cheese or sour cream.
