Blewish Chicken Soup and Collard Greens

This recipe makes a big pot of soup!

Ingredients

Ingredients for the collard greens:

1 or 2 bunches of collard greens (organic if possible), rinsed thoroughly

Enough chicken stock to cover the greens

Salt

Pepper

Onion powder

Garlic powder

Ingredients for the Chicken Soup: 

1 whole soup chicken

1 large yellow onion, diced

6 garlic cloves, diced 

2 to 3 large carrots, peeled and sliced into ¼ in discs

3 to 4 stalks celery (including tops) washed and sliced fine

Oil for sauteing vegetables

Step by Step Instructions

Step 1

Chop the greens and put them in a large stock pot.

Step 2

Cover with chicken stock and season well with salt, pepper, onion and garlic powders.

Step 3

While greens are cooking, in a second stock pot saute the onions and garlic until they are golden.

Step 4

Add the chicken to the pot and cover with water.

Step 5

Bring to a boil then cover the pot and reduce to a simmer for one hour / until the chicken is tender.

Step 6

Remove the chicken from the pot and let cool

Step 7

Take the chicken off the bones and return the meat to the stock pot it cooked in.

Step 8

Add the cooked collard greens to the pot.

Step 9

Add the other vegetables and season to your taste.

Step 10

Let simmer for one hour.

Step 11

Taste to adjust seasoning.

Step 12

Serve & enjoy
