Meat Stuffed Grape Leaves
(meat, makes approx 40 rolls)

Ingredients

  • 1 large onion, chopped
  • ¼ cup fresh dill, chopped
  • 2 lbs. ground meat: beef, lamb, or vegan meat alternative
  • ¾ cup long-grain rice, white or brown
  • 3 tablespoons grapeseed oil
  • 4 tablespoons fresh lemon juice
  • 16 oz. jar grape leaves 
  • 4 cups tomato sauce
  • kosher salt, to taste
  • fresh ground black pepper, to taste
  • 1/2 cup white wine 

Step by Step Instructions

Step 1

Make your stuffing: Mix together onion, dill, ground meat, rice, vegetable oil, and salt and pepper.

Step 2

Rinse the jarred grape leaves in cool water. Pat them dry a little bit with paper towels. Lay the grape leaves on a flat dry surface, wide stem side facing you.

Put 1 tablespoon of the stuffing mixture onto the grape leaf and roll as you would an eggroll or a stuffed cabbage roll (roll the bottom up, fold in the sides, then continue rolling up). 

Repeat with the remainder of the ingredients.

Step 3

Place the rolls into a large, deep saute pan or a ceramic casserole dish. Set aside.  

Step 4

In a second large bowl combine the tomato sauce, lemon juice, salt, pepper, and white wine. Mix well.  

Step 5

If cooking on the stovetop, arrange the stuffed grape leaves in your pot in a circular manner fitting them into the pot tightly.  

Create a second layer if needed.  

Step 6

Pour over the sauce and cook at a low simmer for 2-3 hours.   

Step 7

If using a casserole dish, arrange to fill the bottom of the dish and then create a second layer if needed.  

Step 9

Place in an oven preheated to 350F. Bake for an hour and a half to two hours.

This freezes well.
