Vegan Cashew ‘Ricotta’ Cheese

Ingredients

2 cups raw cashews

⅓ cup water, plus more for soaking

2 to 3 tablespoons nutritional yeast

1 garlic clove

2 tablespoons freshly squeezed lemon juice 

Kosher salt to taste

Pepper to taste 

Step by Step Instructions

Step 1

Soak the raw cashews in enough water to cover for 4 hours, preferably overnight.

Step 2

Rinse and drain the cashews then place them in the bowl of a food processor or a high-speed blender.

Step 3

Add ⅓ cup water and all of the remaining ingredients.

Step 4

Pulse until the texture resembles that of ricotta cheese.

Step 5

Taste and adjust seasoning.

Step 6

Use right away in cake recipes and pasta dishes.
