Vegan Feta

This is made with tofu and will NOT melt

Ingredients

1 package extra firm tofu

½ cup water

¼ cup fresh squeezed lemon juice

¼ cup apple cider vinegar

2 tablespoons miso paste (preferably white miso)

2 tablespoons nutritional yeast

1 tablespoon olive oil

1 teaspoon dried basil

1 teaspoon dried oregano

1 teaspoon minced garlic

½ teaspoon Kosher salt

Freshly ground black pepper to taste

Step by Step Instructions

Step 1

Press the tofu for an hour to two hours. Cut into cubes.

Step 2

Mix the marinade ingredients together and pour over the cubed tofu in a container with a lid. Seal the lid and let marinate in the refrigerator overnight.

Step 3

The flavor will intensify the longer it marinates. Use within 3 to 4 days.
